Homemade Polish horseradish is a popular flavoring for Polish dishes, especially for such meals as Christmas and Easter dinner. The preferred way to serve it is freshly grated, without any cream or milk added to it. Does this Spark an idea?

  1. Dishes

    • Horseradish is used to flavor a variety of dishes. For example, it can be a topping for kielbasa, ham and roasts. It's blended with cranberries and lemon juice to make a sauce for roasts and mixed with pickled beets to make relish. You can also dip hard-boiled eggs in it.

    Preparation

    • The horseradish root is peeled with a vegetable peeler, wrapped in plastic and frozen overnight. The next day, grate the roots with a hand-held grater, mix them with one or two tablespoons of vinegar and one-half tablespoon of salt, pulse the mixture together in a blender and refrigerate it in a small jar.

    Creamy Horseradish

    • Creamy horseradish can be made by mixing a heaping tablespoon of horseradish with a cup of sour cream, then adding salt, sugar and lemon juice or vinegar to taste. You can also also blend a half-cup of heavy cream with a half-cup of horseradish with a fork, and add the other condiments to flavor it as you like.
