Pine nuts are popular toppings for salads.

Pine nuts are actually the seeds of pinecones. The nuts were a staple for Native Americans who ground them into meal to cook and roasted them for snacks. They grow in the Great Basin regions of California, Colorado, Arizona, New Mexico, Utah and Nevada. Does this Spark an idea?

  1. Harvest Season

    • Pine nut crops are undependable and are only abundant and healthy around every three to seven years. Pickers typically explore growing areas in the middle of the summer to discern which crops look most promising. Pine nuts are ripe and ready to pick In September and October.

    The Picking Process

    • If the cones are open, they can be knocked to the ground and the nuts shaken from them. If they are unopened, the cones are picked from the tree and ripened in the sun or in burlap sacks.

    Permits & Restrictions

    • The Federal Bureau of Land Management (BLM) sells permits to commercial pickers. Non-commercial pickers can to pick up to 25 lbs. of pine nuts without a permit.
