The white ginger plant grows in U.S. Department of Agriculture plant hardiness zones 8 through 11. Whether in the garden or in containers, full-grown plants reach up to six feet in height. In addition to the large, white and very fragrant blooms, white ginger plants produce edible roots that are used in herbal medicines.

White ginger seeds can be ordered online or purchased from garden centers. White ginger thrives in hot, moist conditions, but can grow in cooler climates provided it receives proper care. White ginger plants need warmth, lots of sun or light and moist soil. Additionally, the plants should be fertilized weekly, as they are heavy feeders.

Once a year the white ginger plant should be divided to encourage growth. Once the showy blooms have faded, they should be plucked and the stems clipped to the ground to promote the development of new shoots. These plants are not cold hardy and even a light frost can kill them. However, a well-mulched plant may grow back the next spring.
