Freezer Types and Temperatures

The most important equipment to consider is your freezer. Use a freezer with a consistent temperature below 0 degrees, advises the Food Safety and Inspection Service of the U.S. Department of Agriculture. If you are not sure about your freezer's temperature, purchase a freezer thermometer and monitor it. A refrigerator freezer is opened frequently, and will have a less consistent temperature. A free-standing freezer is best for long-term storage.
Types of Packaging

Ideal freezer packages are moisture-proof, vapor-proof, and able to withstand temperatures of 0 degrees Fahrenheit or below. They can include plastic containers, freezer bags or vacuum bags. Vacuum bags are advantageous since they allow less air in the container, and therefore a smaller chance for freezer burn.

Thawing Food

There are three ways to thaw food safely: in the refrigerator, in cold water or in the microwave, reports the Department of Agriculture. It is not safe to thaw food on the counter, since it thaws at a rate that allows bacteria to grow. The refrigerator is the safest method, because it keeps food at a temperature low enough to prevent quick bacterial growth.
Freezing Food Fast

The faster food is frozen, the better its quality will be. Quick freezing prevents ice crystals from forming, and helps meat keep its juiciness. For fast freezing, spread food out in the freezer. Pack it closer together after it is completely frozen.
Refreezing Food

If food is thawed in the refrigerator, it is safe to refreeze it without cooking. Previously cooked foods, or leftovers, can also be refrozen within 3-4 days.
Foods That Cannot Be Frozen

Most foods can be frozen, but some lose their quality. Eggs and canned foods are some that cannot be frozen. Foods such as cream sauces, mayonnaise and lettuce simply lose their quality.
