Temperature of Wine Cellars
Proper long-term storage of wine for the purpose of aging must be done at the right temperature to avoid damaging the wine. A home wine cellar should be a separate room in which the temperature, humidity and light all can be controlled. Does this Spark an idea?

Proper Wine Cellar Temperature

The recommended temperature for a wine cellar is 55 degrees Fahrenheit. Keeping your wine cellar significantly above this recommended temperature for extended periods of time will speed up the aging of your wine, possibly causing your fine wines to age past their prime before you have a chance to drink them.
Humidity

Along with the proper temperature, wine must be stored at the correct humidity for aging. In a wine cellar, the relative humidity should be a constant 70 percent, or slightly higher, to ensure the cork does not dry out and shrink, causing air to contact the wine. If the humidity level rises too high, there is a risk of mold forming on the wine bottle labels.

Wine Refrigerators

If you are unable to provide a temperature- and humidity-controlled environment for your wine, consider storing it in a wine refrigerator. Many of today's wine refrigerators come equipped with dual compartments, with separate temperature controls for storing red and white wines.
