What Is the Definition of Artisan Bread?

What Is the Definition of Artisan Bread? thumbnail
Artisan bread is both simple and artistic.

In addition to specialty bakeries, many grocery stores and markets offer artisan breads as well as the more commonly known mass-produced varieties. As its name suggests, making artisan bread is a craft, with special attention paid to high-quality ingredients and processes. Does this Spark an idea?

  1. Features

    • Artisan bread cannot be found straight off an assembly line, wrapped in plastic, with an extended shelf life. It is made from the most basic of ingredients--flour, yeast, salt and water--with no chemicals added. While other ingredients may be added depending on the type of bread, they will be natural ingredients like olive oil, sugar or herbs.

    Process

    • Baking a loaf of artisan bread requires much practice, as well as both an artistic touch and a knowledge of chemistry. The ratio of ingredients, the order in which they are added, and the stretching and kneading of dough all have a huge role in the final product.

    Types

    • Some of the most popular types of artisan breads include focaccia, brioche, baguettes and sourdough. Many artisan loaves feature other flavorings like cheese, dried fruit, nuts, herbs and olives.

    Misconceptions

    • Artisan bread is not necessarily fancy and expensive. It is actually the simplest form of bread and, depending on where it's sold, very affordable.

    Expert Insight

    • Baking artisanal bread is a scientific process.
Baking artisanal bread is a scientific process.

According to Barry Harmon, owner of Artisan Bread Baking, extended fermentation is the key to good artisanal bread. However, the temperature plays a key role, and he suggests becoming comfortable with a basic bread recipe before experimenting with allowing the dough to ferment longer.
