Smoking food imparts a unique flavor. The process is easily accomplished using a commercially manufactured smoker. Brinkmann electric smokers are widely available to consumers. Does this Spark an idea?

  1. Choosing and Preparing the Wood

    • Any nut or fruit wood works well. Avoid resinous wood like pine as it infuses the food with a foul flavor. Pieces cut to 3 to 4 inches long and 1 to 2 inches thick are recommended. If the wood is dry, submerse it in water for 20 minutes or individually wrap the pieces in perforated foil. Three or four chunks are ideal.

    Preparing the Smoker

    • Position the wood on top of the lava rocks near the electric element but not directly on it. Carefully rest the empty water pan in the holder at the bottom of the smoker. Set the body of the smoker on the base pan. Fill the pan with marinade or warm water leaving a 1-inch gap between the water and the top.

    Smoking the Food

    • Place the grill with the food on it above the water pan. Repeat for each cooking level. Cover with the dome lid and plug in the smoker. Check and adjust water levels every two to three hours. Consult the manufacturer's manual for cooking times.
