Crepes Suzette is an elegant dessert consisting of a thin crepe flamed in a sauce of mandarin orange zest, sugar, and a liqueur such as Grand Marnier. There are several French factions who lay claim to the invention of this sweet favorite. Does this Spark an idea?

  1. The Most Popular Version

    • The most popular version of the history of Crepes Suzette occurred at Monte Carlo's Café de Paris in 1895. Teenager Henri Charpentier accidentally set a dessert he was making for the Prince of Wales, soon to become the King Edward II of England, on fire.

      When the Prince asked for the name of the spur-of-the-moment concoction, Henri blurted "Crepes Princesse." The Prince requested that he re-name the dessert "Crepes Suzette" after a beautiful young lady who had accompanied him to the restaurant. Henri obliged and was awarded a hat, a ring, and a cane by the Prince.

    Aftermath

    • Henry Charpentier went on to become a famous French chef and notated his role in the creation of Crepes Suzette in his book "Life a la Henri--Being the Memories of Henri Charpentier."

    A World-Renowned Favorite

    • And so Crepes Suzette came into being and can be enjoyed at fine dining restaurants and private clubs in France and all over the world.
