The ready-to-eat breakfast cereal market accounted for more than $11 billion dollars in sales in 2001. Cereal is polished to provide consumers a shiny and appealing product that will improve sales.

  1. The Machine

    • A patent was issued May 16, 1989, for a cereal-grain polishing apparatus. The device includes a series of tubes that feed the cereal into a long polishing chamber.

    The Process

    • The cereal is air-injected into the tube and then agitated to create a shiny exterior. A liquid agent is added to apply a shine. The cereal then exits the tube to be packaged.

    Ingredients

    • Many sealing machines use shellac, a natural resin produced by the female lac insect, to polish the cereal.

    Conflict

    • Some vegetarians avoid breakfast cereals because of the use of shellac in polishing. When shellac is produced, insects are crushed and incorporated into the finishing liquid, according to FoodNavigator.com.

    New Combined Process

    • A new product, introduced in 2009 by Alfred Wolff, incorporates the two steps of the cereal polishing process. Prior to the new technology, cereal was first polished and then sealed to protect the shine. The new technology by the German company combines the two steps into one.
