  1. Refrigeration

    • Refrigerated tomatoes, whether cut or uncut, undergo a textural change in the refrigerator. It is best to eat tomatoes when they are first cut open.

    Four-Hour Rule

    • If fresh cut tomatoes will be eaten within four hours of cutting, they should not be stored in a refrigerator. These tomatoes should be wrapped in plastic wrap and stored on the counter.

    After Four Hours

    • If cut tomatoes will not be used within four hours from the time they are cut, they must be stored in a refrigerator to prevent bacterial growth.

    24-Hour Rule

    • All cut tomatoes should be eaten within 24 hours from the time they are first cut, or thrown away.

    Visible Bacteria

    • Never use tomatoes that contain visible bacterial growth. These tomatoes can cause serious illness.
