Difference Between Instant Yeast & Bread Machine Yeast

Fresh yeast, active dry yeast, instant yeast, rapid-rise yeast, bread machine yeast--so many names exist for yeast and confusion is understandable. Among these, instant yeast is a class of dry yeast that includes bread machine yeast. Does this Spark an idea?

  1. Difference

    • As one of a family, all bread machine yeast is instant yeast. However, not all instant yeast is bread machine yeast.

    Members of the Family

    • Besides bread machine yeast, members of the instant yeast family include rapid-rise, quick-rise or fast-rising yeast, all of which are names for the same thing.

    Instant Yeast

    • Instant, and therefore bread machine yeast, is finely grained and can be added to dry ingredients without having to first mix the yeast with water. This makes the yeast a natural fit for bread machines.

    Rapid-Rise

    • Those kinds of yeast labeled rapid-rise, quick-rise, fast-acting or other such names cannot be substituted for bread machine yeast with the same results.

    Ingredients

    • Instant yeast packets include more than yeast--for instance, ascorbic acid, which helps bread gain volume. This, among other things, distinguishes instant dry yeast from active dry yeast.
