Rolled fondant or fondant icing, commonly used to decorate wedding cakes, is rolled out like pie dough and stretched and shaped to cover the cake. Gelatin, agar or glycerine are thickening agents used to make the sugar flexible and dough-like. This gives the cakes a smooth appearance.
How Rolled Fondant is Used

Fondant can be kneaded until it reaches a consistency in which it can be rolled. When it is the right thickness, it is lifted over the top of the cake, then shaped to the sides. Air bubbles can be smoothed out, and ragged edges can be trimmed with a sharp knife.

Poured Fondant Basics

Poured fondant has a thinner consistency than rolled, so it will cling to the sides of a cake as it pours over the surface. Unlike rolled fondant, it will harden as it dries.
How Poured Fondant is Used

Poured fondant can be used on cookies and petit fours. Pour fondant icing over cake from the center out until it sheets and coats it. Pour down the sides and rotate the cake until the entire cake is coated. Poured fondant can also be used on petit fours and cookies as a base for decoration.
