Malted milk is a powder made from milk, salt, baking soda, and malted barley and wheat extract. While slightly bitter if tasted straight, malted milk powder takes on a sweet flavor when added to milk shakes and other confections.

Malted milk is used as a sweetener for ice cream, milk shakes, icings, fillings, and baked goods. It can even be made into candy centers, like in chocolate-covered malted milk balls.

On average, milk solids comprise between 10 and 25 percent of malted milk powder.

Adding a tablespoon or two of malted milk powder to an ordinary milk shake gives it a richer, more full-bodied taste. Such milk shakes are often known as malts.

History

During the 1950s, malt shops sprung up all over the United States, gaining popularity with teenagers for specializing in hamburgers, hot dogs, French fries, and malted milk shakes.
