In its simplest terms, cream of chicken soup is nothing more than chicken stock added to a white sauce. However, there are countless variations on the theme, with something to fit everyone's tastes. Does this Spark an idea?

  1. Simple Soup

    • The easiest way to make cream of chicken soup is to mix four parts chicken stock with one part heavy cream. Salt, white pepper, ground nutmeg, and chopped parsley or chives may be added for seasoning. Heat the soup without ever bringing it to a boil.

    Thick Soup

    • For a thicker cream of chicken soup, melt four tablespoons of butter, and add four tablespoons of flour. Stir in the four cups chicken stock and one cup heavy cream and then season to taste.
