The Comprehensive Cancer Center at University of California, San Francisco, recommends a plant-based diet for possible prevention, as well as for maintaining a healthy diet with prostate cancer. Vegetables like leafy greens that are high in folic acid are beneficial, as are foods like carrots and yams, which are high in beta carotene. A study conducted by UCSF found that men who ate at least 28 servings of veggies per week had a reduced risk of developing prostate cancer than those who only consumed 14 servings or less per week.

Fat intake is extremely important when someone is in the second stage of prostate cancer because of the issues with rapid and unhealthy weight loss associated with the disease. Increasing fat and calories, in addition to a healthy and balanced diet of starches and vegetables, will help keep the weight from dropping too quickly.
