Chipotles are dried and smoked jalapeno peppers that originated in pre-Aztec Mexico. They are used in Mexican and American cuisines to add spice and their signature smoky flavor to many different dishes.

Near Mexico City, before the time of the Aztecs, chipotle peppers were developed as a way to preserve jalapenos, which were otherwise difficult to dry and store for later use.

To make chipotle peppers, jalapeno peppers are smoked and dried in a method similar to that used to smoke meats. They can be sold whole, powdered, chopped or canned in a sauce.

Mexicans prefer "chile ahumado" chipotle peppers, which are tan and have a strong smoky flavor. Smaller "morita" chipotles are darker and milder, and they are more commonly sold in the United States.
