Macerating is a procedure using in cooking to break food down using liquid. The raw or dried food absorbs the liquid, making it easier to chew and much more flavorful. Does this Spark an idea?

  1. Fruits

    • Because fruit is porous and composed primarily of liquid, macerating only requires sugar. Sprinkle the desired amount over the fruit and allow to sit in its own juices. For more flavor, add a teaspoon of bourbon or lemon juice. Check the fruit often as it will break down quickly, especially when using alcohol or acids.

    Vegetables

    • Macerate vegetables in a flavorful liquid, such as chicken or beef broth. Observe the vegetables often as they will break down and become soggy with too long in the liquid.

    Herbs

    • Herbs Macerating in Oil

      For a delicious, flavored oil used in grilling or sautéing, macerate rosemary, thyme, or garlic in olive oil. Crush the herbs to allow more of the essential oils to secrete into the olive oil.

    Alcohol

    • Alcohol quickens the maceration process. Observe food frequently as to not allow it to over-soak and fall apart.

    Timing

    • Different foods will require varying lengths of time to macerate. During maceration, check the food often, until it reaches desired tenderness.
