Convection ovens differ from regular ovens and microwaves by the constant motion of air inside the oven. Using a fan, the convection oven is more effective at certain aspects of roasting, baking and reheating.

  1. Air movement inside a convection oven ensures that cooking temperature is equal throughout the interior. Foods are cooked evenly, and even when several racks are used at once, trays and pans on lower racks do not block heat from reaching the top.

  3. With the moving air, convection ovens are more efficient, cutting cooking times by 25 percent. That's a perfect feature for busy people.
  4. Reduced Temperatures

  5. Instead of heating the food more quickly, a cook can decide to reduce the temperature by 25 degrees. Either way, faster cooking or cooking at a lower temperature retains more nutrients in the food and results in energy savings.
  6. Reheating Food

  7. Because of the speedier results, people might choose to reheat food in the convection oven rather than the microwave. Although very convenient, a microwave can cause texture changes and uneven heating.
