Calcium Lactate Information

    • Calcium lactate is combined with gluconate to prevent calcium lactate crystal formation in cheese. It is added after the cheese has solidified and has been cut into masses.

    Production

    • Calcium lactate is a byproduct of fermentation that occurs when bacteria break down milk products. Commercial companies produce it by fermenting starch and molasses.

    Other Uses

    • Calcium lactate is used as a preservative against mold and yeast. It is used to stabilize fruits, vegetables and potatoes during processing and is also an antioxidant.
