Brewer's yeast is fungus, but it is also a nutritional goldmine, filled with amino acids, vitamins, minerals and protein. It may be active, used in making bread or to ferment grains for alcohol drinks, or it may be inactive and serve as a nutritional supplement.

  1. Bread

    • Brewer's yeast is a leavening agent in bread making. Its conversion of sugars to carbon dioxide forms bubbles and makes bread rise.

    Probiotics

    • Probiotics use yeast to help repopulate our digestive tracts with beneficial flora. Probiotics can be found in many yogurts and they help to relieve diarrhea and treat irritable bowel syndrome.

    Nutritional Yeast

    • Nutritional yeast is a source of the B-complex vitamins vegans require but cannot get from animal products. It may be used as a breading or cheese substitute in cooking.

    Vegemite

    • Vegemite is a spread made from brewer's yeast. It is extremely popular in Australia and has a number of culinary uses.

    Pretzels

    • Even the hard-style pretzels contain brewer's yeast, lending the simple dough added flavor. Pretzels require up to 35 percent water to form their bulk, in part to bring the yeast and sugar together.
