What Is Irish Bacon?

American cooks are often confused about Irish bacon, which is made differently from the product common in the United States. It is an essential element in a traditional Irish-style breakfast, but can be used in sandwiches and other bacon dishes. Does this Spark an idea?

    • Manufacturers make Irish bacon from the back meat of a pig instead of the pork belly used in U.S. products, similar to Canadian bacon. Both Canadian and Irish bacon are sometimes referred to as back bacon.

    Appearance

    • Irish bacon has more fat than Canadian bacon and is often produced in round form. The fat surrounding the meat can make the bacon tastier.

      But Irish manufacturers are now making new varieties for the U.S. market that appear similar to U.S. bacon.

    Preparation

    • Like Canadian bacon, the Irish variety is thicker than U.S. bacon, but is prepared in the same way, except that it is not cooked to a crisp.

    Uses

    • Irish bacon is an essential part of a traditional Irish breakfast of eggs, white pudding, blood pudding and bacon.

      But it also works well in club sandwiches, as well as omelets, frittatas and in dishes such as bacon-wrapped barbecue shrimp.

      Some chefs suggest substituting round Irish bacon for the Italian cured meat pancetta in recipes.

    Health

    • Irish bacon generally has less fat than U.S. varieties and may be marginally better for heart health.

    Availability

    • Irish bacon can be bought online for about $7 a half-pound, or at stores offering traditional Irish food.
