How Long to Knead Dough

Kneading dough is an essential, yet uncomplicated, process when making bread. The trick to proper kneading is not in the method, but in the amount of time used to knead the dough. Using the proper time ensures a good mixture of the ingredients.

    By Hand

  1. Kneading by hand takes eight to ten minutes. Use lightly floured hands and counter top when using this method so that the dough doesn't stick.
  2. By Machine

  3. Kneading by machine takes five minutes using the slow setting with a dough hook. You can also use the food processor, pulsing for 45 seconds at a time.
  4. Problems

  5. The main problem with kneading dough is if it isn't done long enough depending on the method used. The ingredients also play a part in how long to knead dough, as whole wheat takes longer than white bread.
  6. Reasoning

  7. The reason behind kneading dough for certain amounts of time is what takes place during the process. Gluten develops so that the dough rises as air incorporates into the dough and the ingredients are distributed evenly.
  8. Appearance

  9. Before kneading, the dough should appear tacky. This is why you need the flour. If the dough is coming out dry, you have added too much flour. If so, spray vegetable oil on the surface of the dough and knead more.
