What Is Turbinado Sugar?

Turbinado sugar has become more prevalent in the United States in recent years. The flavor lies somewhere between those of refined white sugar and brown sugar. Does this Spark an idea?

  1. Where Does It Come From?

    • Turbinado sugar is made from sugar cane juice that is heated and crystallized. It is then spun in a centrifuge. This process eliminates some of the molasses that coats it.

    Crystal Size

    • The crystals of turbinado sugar are larger than those of the more refined white sugar. Take care when substituting it in a recipe, as these larger crystals may not dissolve as readily as refined white sugar.

    Color

    • The color can range from a very light tan to a darker tan. The color is molasses coating the crystals. In refined white sugar all of the molasses has been removed.

    Benefits

    • True turbinado sugar is considered vegan as it does not come into contact with any animal products during its manufacture. Refined white sugar is usually treated with bone char, an animal byproduct.

    Uses

    • Turbinado sugar, when used to sweeten coffee and tea, adds an additional flavor. It can be used as a decorative topping for baked goods and other desserts. It can be substituted for white sugar in many recipes, but it may change the color of white foods.
