Banquet Server Duties

Hotels, resorts and restaurants hold banquets for a variety of occasions, including weddings, parties, anniversaries, company functions and charity dinners. Banquet servers have a variety of duties to ensure that banquets run smoothly.

  1. Set-Up

    • Banquet servers arrange tables according to the layout specified by the party holding the banquet. Servers also dress the tables with linens and set them with china, silverware, napkins and glasses.

    Service

    • At a sit-down dinner, banquet servers deliver courses to the guests, ensuring that any pre-arranged meal selections are distributed appropriately. For buffets, banquet servers sometimes dish the food out for guests or ensure that the buffet remains well-stocked.

    Clearing

    • Between courses or after the meal is finished, banquet servers clear plates, taking them to the kitchen for the dishwashers to scrape and clean.

    Cleaning

    • After the banquet, servers gather any remaining plates and remove the table linens for laundering. They return tables and chairs to their proper storage location and collect any items that were forgotten by guests.

    Other Expectations

    • Throughout the banquet, servers are responsible for being professional and courteous to all guests. They must move quickly and work carefully so as not to drop any food or dishes.
