All popcorn starts as a kernel, and all popcorn kernels have a hull or a hard outer surface. Although some popcorn has a thin hull, no popcorn is completely without a hull. A kernel is comprised of a drop of water surrounded by soft starch. When the kernel is heated, the water expands causes pressure. When there is enough pressure, the hull bursts open and the soft starch expands suddenly, creating popcorn. Does this Spark an idea?

  1. Types

      There are two types of popcorn kernels: "butterfly" or "snowflake" kernels and "mushroom" kernels.

    Features

    • Butterfly kernels are large and look like they have wings when popped. Mushroom kernels look more like a ball when popped, and are solid.

    Function

    • Mushroom kernels are used to make caramel and candy-coated popcorn, as they don't break apart as easily as butterfly kernels.

    Warning

    • Kernels need to be stored in an airtight container in a cool, dry place. If the kernels lose moisture, they will not pop.
