Job Description of a Food Expediter

A food expediter works in the kitchen alongside cooks and servers. This person is a liaison between the kitchen and the dining room staff, and needs to be comfortable dealing with both groups of people under stressful conditions.

  1. Prep Work

    • As an expediter, you may be asked to chop parsley, create radish roses and do any number of tasks that supply the kitchen with garnishes for finished plates. It will probably be your job to put these garnishes on each dish once the chef is done plating them.

    • The expediter's most important job is to make sure each table gets exactly what they ordered. The person with the medium-rare steak wanted potatoes instead of vegetables? You are in charge of making sure the side dishes match up on every plate before the server whisks them away.

    Know Your Food Items

    • In order to do your job efficiently, you will need to familiarize yourself with each dish on the menu. Know what it is going to look like before it comes out. The chef has a million orders he is keeping track of, and you are the last set of eyes that can catch a mistake before the food leaves the kitchen.

    Co-Workers

    • Getting on the chef's good side will help you learn about the dishes more quickly. Likewise, staying on the wait staff's good side will keep them from blaming the first face they see (yours) when something gets held up in the kitchen.

    Have Fun With It

    • At the end of the day, most will agree that the expediter's job is far more rewarding than being on the dining room floor dealing with customers. Though they can be hot and cramped, restaurant kitchens are often fun, exciting places to work in.
