What Is Fondant Used For?

Fondant is a confection made most often of sugar, corn syrup (glucose) and water. It is used in desserts such as cakes, pastries and candies. Does this Spark an idea?

  1. Types

    • There are several types of fondant including pourable, rolled, colored, flavored and liquefied. Their differences stem mostly in consistency and function. Pourable and liquefied fondants are of the thinnest consistency. Rolled, flavored and colored fondants are thicker, much like dough.

    Pourable Fondant

    • Pourable fondant is rather thin due to being mixed with a sugar syrup for flavor and is used to create the icing on traditional French petits fours.

    Rolled and Colored Fondant

    • Rolled fondant is stiffer, most often due to the addition of gelatin to the recipe, and is used to decorate wedding cakes. Colored fondant is used for cake decoration as well--it can be shaped to create flowers or other things.

    Flavored Fondant

    • Flavored fondant is used to create the centers of candies as well as icing cakes.

    Liquefied Fondant

    • Liquefied fondant is found most often in chocolate covered cherries. It actually starts out as flavored fondant, but due to a reaction with cherries and certain other creamed centers (such as those found in Cadbury creme eggs), becomes more like a juice.
