Foods Containing Vitamin K

Vitamin K helps blood to clot normally, prevents cardiovascular disease, helps maintain bone mass and prevents osteoarthritis, and is necessary for skin cell production. It also has antioxidant properties and stops free radicals from doing cell damage. Vitamin K is mainly found in vegetables, and fresh ones have the most, although light cooking is OK.

  1. Major Source

    • The primary source of Vitamin K is green, leafy vegetables. Highest amounts are found in Swiss chard, kale, collard greens, spinach, watercress and turnip greens.

    Other Green Vegetables

    • Other green vegetables with not quite as high an amount but still very beneficial include broccoli, Brussels sprouts, dandelion greens, asparagus, arugula and green beans.

    Lettuce

    • Several types of lettuce are good sources of Vitamin K. These include Boston, butterhead, Romaine and green leaf.

    Additional Foods

    • Other foods with Vitamin K are onions, sauerkraut, okra, cabbage, celery and rhubarb.

    Spices

    • Some spices, particularly thyme and sage, are good sources of Vitamin K.
