I’m Amie Valpone, HHC, AADP and I am the Editor-in-Chief of the website and blog, The Healthy Apple.

I am a Manhattan based Celebrity Chef, Culinary Nutritionist, Professional Recipe Developer, Food Photographer, Writer and Motivational Speaker specializing in simple gluten-free, soy-free and dairy-free ‘Clean’ recipes.  Clean eating me heal myself from a decade of chronic pain including Lyme Disease, Polycystic Ovarian Syndrome, and Hypothyroidism.

Having gone through a set of life-changing diagnoses early in my professional career, I was forced to change the way I live, eat and ultimately the way I make a living. Today my sole desire is to help you and your body feel as amazing as possible through various simple yet life-altering changes to your nutrition and lifestyle habits.

It wasn’t until I began working with an Integrative Medical Doctor that I learned I was suffering from heavy metal accumulation and was born without the gene to absorb folate (MTHFR), a key factor in detoxification.  This made me realize that Western medicine can only do so much for me – it wasn’t offering my body what it needed to heal.  Using acupuncture, yoga, meditation, herbal medicine, and fresh, whole, unprocessed foods, I healed and remain symptom free, happy and healthy in the best city in the world, Manhattan!

Not limiting my focus to companies and brands, I work hands-on with individuals and groups as a Personal Chef, Food Allergy Concierge and Healthy Family Pantry Stylist to guide them through their transition into a healthier lifestyle.  I am a Gluten-Free Industry Innovator when it comes to helping clients, the community and companies live healthy and happy lives.  Struggling with multiple food allergies since I was a young girl, my recipes cater to the gluten, dairy and soy-free vegetarian and vegan lifestyles, without sacrificing taste.

I cook. I travel. I exercise. I write. And I do it all Clean and Gluten-Free.

Here, on eHow I will be focusing on Clean Eating recipes that you can create for in your own home; they’re always filled with simple, delicious and fresh organic foods that help nourish and detox your body. I live in Manhattan, NYC where I cook for a variety of clients including celebrities and people with busy lifestyles who enjoy healthy, organic, whole foods.  I also host monthly dinner parties, cooking classes and speaks nationwide; check out my Event Calendar to see when I’m in your area.
