Green Beans with Crushed Toasted Almonds Recipe

Locavore chef Louisa Shafia’s crowd-pleasing green beans are an easy and delicious side dish.

Green Beans with Crushed Toasted Almonds Recipe

Makes 4 servings 

2 tablespoons olive oil
2 small shallots, thinly sliced widthwise into rings
1 1/2-pounds green beans, trimmed
Salt and freshly ground black pepper
1 cup toasted almonds, coarsely chopped

Place a medium skillet over medium heat with the oil.  Add the shallot to the pan and cook, stirring occasionally, until tender, 3 to 4 minutes.  Add the green beans to the pan and continue cooking, stirring occasionally, until the beans are bright green and tender, 3 to 4 minutes.  Season with salt and pepper and stir in the almonds.

Transfer the beans to a serving dish and serve immediately.
