Honey can Last for Years
There is no difference in shelf life between organic raw honey and conventional honey. Honey is edible for years after it is harvested as long as it is properly stored. The honey may crystallize, but it will still be completely safe to eat.
Honey can Ferment
Just like regular honey, if exposed to the air, organic raw honey can ferment and develop an unpleasant taste.
Bottom Line
Organic raw honey in a sealed container can be kept indefinitely even if it crystallizes. To return it to liquid after crystallization, simply heat the honey. Additionally, if your honey ferments it can still be used as a sweetener in cooking.
