How Many Vegetables Should I Grow for One Person?
-
Plan According to Garden Size
-
A 25-by-42-foot garden provides enough vegetables for a two-person household, according to North Carolina State University. Therefore, a garden of approximately half this size should provide plenty of vegetables for one person. A 100-square-foot space per person or even less is recommended by Colorado State University.

Different Planting Methods Affect Yield
-
Traditional row or hill planting (which involves creating a mound of soil where several seeds are then planted) take up considerable space, according to Ohio State University. Intensive planting involves using space carefully to plant as many crops as possible and increase total crop production. Intensive planting methods may produce an equal amount of produce in as little as one-fifth the space.
Bottom Line
-
Start with a garden between 100 and 500 square feet the first year if you will be using traditional planting methods. This should provide enough vegetables for one person. Use the upper range if you will include vegetables such as corn that require a lot of space to grow. Plant 100 square feet or less if using intensive planting methods.
