You need boots that cover enough of your legs to protect you from venomous species in your area. Generally, snakes can strike about one-third of their body length. In the southern United States, where diamondback rattlesnakes occur and may reach lengths of six feet or more, a taller boot may be needed.

Too much boot may cause problems.

Hiking, backpacking, hunting and other outdoor activities are strenuous enough without excessive footwear in the mix. Too much boot can cause unnecessary fatigue or even accidental falls. Also, most snakes will not strike unless stepped on; and then they usually strike directly at the source of irritation: the foot.

Realistically, snakebites are rare and usually occur on the hands of people who accidentally touch or even deliberately taunt the animals. Unless you plan to enter areas known to have large venomous snakes in abundance, standard outdoor footwear for your specific activity is probably enough.
