    There are 30-plus cultivated varieties of rhubarb (Rheum rhabarbarum) and many wild varieties in Russia, China and other parts of the far-east where it is native. Leaf petioles (leaf stems) of the plants are edible, but leaves and roots are highly toxic due to high concentrations of oxalic acid, which occurs throughout the plant. Leaf petioles may be eaten green, red or speckled pink depending on the variety. Rhubarb was originally used as a medicine.
