Since I wasn't able to use as many lemons as my Meyer Lemon tree was producing, I decided to make up a batch of homemade Limoncello Liqueur. Here is a good recipe link: http://patty.vox.com/library/post/homemade-limoncello-when-life-gives-you-lemons.html Below is my simplified version.
Step 1 : Gather ingredients & supplies
1. about (8) lemons
2. bottle of EverClear (about 4 cups)
3. glass canister that seals
4. vegetable/fruit peeler
Step 2 : Instructions
Very thinly peel lemons very carefully to avoid any of the white (pith). trim any excess white off the yellow peels. Once you have about 2 cups, place in glass jar and pour EverClear over the peels. Let sit for 2+ weeks in a cool dark place. The more time, the more the lemon scent/flavor infuses into the Everclear.
Step 3 : Make the simple syrup and add it.
You can store longer, or drink it right away. I think I will store it longer for better flavor.
