Great bread makes great French toast.  I decided on a loaf of French bread from the day-old bread rack.  If the bread is just a little dry, it absorbs the custard mixture better.

Step one for making the custard:  Beat the eggs and milk together.  Custard is what you call the mixture you drag your bread slices through.

Place the bread slices - a couple at a time - into the custard mixture.  (The larger your bowl, the more slices you can fit.  If I ever have to make a lot of French toast quickly, I pour the custard into a casserole dish so I can soak several pieces at once.)

Time to fry.  Melt a tablespoon of butter in a large frying pan or griddle over medium-high heat. Drag the bread slices directly from the custard mixture to the hot pan.  Don't over-fill the pan as you'll need room to flip the bread.

Once the slices are golden brown on the underside, flip them over and fry the other side until lightly browned.  It usually takes about 4 or 5 minutes for the first side and just 2 or 3 minutes for the other side.

If you want to keep all your slices of French toast warm so you can serve them at the same time... place cooked slices on a cookie sheet in an oven set to 200 degrees.

Homemade French toast is easy! Beat some eggs, milk and spices together. Then, dip and fry! I hope you like the recipe as much as I do.

Homemade French Toast Recipe

Ingredients:

10 to 12 slices of bread
1 cup milk
4 large eggs
1 teaspoon salt
1 teaspoon sugar (optional)
1/8 teaspoon cinnamon (optional)
1/4 teaspoon vanilla (optional)
butter - for frying

In a large shallow bowl, beat the eggs and milk together. Add salt, sugar, cinnamon and vanilla and whisk to combine. Place bread slices in egg mixture and coat completely.

Melt 1 to 2 Tablespoons of butter in a large frying pan over medium heat. Fry bread slices until golden brown on both sides. Add more butter as necessary between batches. Serve hot with your favorite toppings.

Makes 4 servings.

      At the Christmas holiday i use eggnog to make my custard, don't forget the powdered sugar and warm up your syrup. For adults add some brandy oh how sexy!

      Aunt Millie's Texas Toast is pre-sliced and the right thickness. Keep bread frozen; take out slices and they thaw by the time you are ready to soak and fry. Can buy fresh or day old and save alittle at the outlet stores.
