In eHow’s recent Knowledge Guru contest, we asked you, “What’s the yummiest popsicle you can make at home?” You served up homemade recipes so delectable that we just couldn’t keep them to ourselves. Here are the top five sweet treats you submitted—as voted by eHow fans—so you can beat the heat all summer long.
1. Mango and Orange Popsicles (Contest winner!)
By Edith Delgado
2 cups chopped mango (fresh or frozen)
1 cup orange juice
2 tbsp. honey
Blend all ingredients until smooth.
2. Kiwi Ice Pops
By Victor Joli
1¾ cup water
1 cup sugar
4 kiwis
½ cup fresh lime juice (about 4 limes)
Make the syrup: Combine 1 cup of water with the sugar in a small saucepan and bring just to a boil. Set aside to cool.
Make the ice pops: Using a paring knife, cut kiwis into quarters, peel, and remove the white core and seeds from each piece. Place the seeded kiwi pieces in the bowl of a food processor fitted with a metal blade and purée to a liquid—about 1 minute.
Combine the puréed kiwi, ¾ cup syrup, lime juice and remaining ¾ cup water in a large bowl. Pour the mixture into molds and freeze until solid—about six hours.
3. Orange Juice and Grenadine Popsicles
By Rhonda Altman
To add a new flavor to your favorite orange juice pops, mix orange juice with grenadine and freeze.
“The citrus taste mixed with some extra sweetness is just perfect!” says Rhonda.
4. Strawberry and Lime Margarita with Extra Tequila
By Linda Maldonado
This grownup pop is perfect for mom and dad. Try it as the sweet ending to an outdoor barbecue.
5. Root Beer Float-sicles
By Kelly Boylan
4 cups root beer
6 maraschino cherries (stemmed)
2½ cups vanilla ice cream
Pour 4 cups of root beer into a pitcher. Place in the refrigerator for about 20 minutes or so to flatten out the soda.
Put a cherry in each mold. Pour some root beer into each mold until it’s half full. Put a small scoop of ice cream into each popsicle mold so it’s about three quarters full. Slowly add more root beer until the molds are full. Scoop off the foam with a spoon. Freeze for at least six hours.
Remove from the freezer. Let stand at room temperature for five minutes before removing the popsicles from the molds.
