Safe Cleaning Procedures

Utilizing safe cleaning procedures after using a deli slicer can help minimize any risks of injury. To clean deli slicers safely, always turn the blade to zero, turn off the unit and unplug the electrical cord. Put on cut resistant gloves and, while using sanitizing solution, move the rag in a circular motion to clean the blade. When breaking down the machine at the end of the shift and cleaning the blades in the sink or dishwasher, do not leave them unattended at any time.

Cutting Techniques

When cutting meats or cheese, make sure they fit properly into the push guard. Any foods that are too big for the push-guard must be trimmed to ensure an adequate fit. Attempting to cut foods that are too large for the push guard can cause your hands to slip when pushing forward.
Always use the push guard when pushing food through the deli slicer. The push guard helps prevent your fingers or hands from coming in contact with the blade.
Cut Resistant Gloves

Most delis require their employees to wear cut resistant gloves when working with the meat slicer. Made out of Kevlar type material, gloves will prevent cuts and lacerations to your hands if they come in contact with the blade.
Other Safety Hazards

When finished using the deli slicer, always turn the blade to zero so other employees will not cut themselves. Never run around a deli slicer, and make sure to clean up any water or spillage that may be in the vicinity. Deli slicers also come equipped with a safety switch. Never bypass or tamper with a slicer's safety switch, as this violates the Occupational Health and Safety Administration's safety regulations.
