Israeli food is influenced by a range of nationalities

Countries have a variety of dietary habits which influence the overall health of the population. The Israeli diet is little known in the West but contains an interesting mix of Jewish and African influences as well as a high omega-6 and fruit content. Does this Spark an idea?

  1. Cultural Background

    • Israel is a diverse country, containing over 70 different nationalities. Judaism is a key influence, as after the Second World War, Eastern European Jews came to Israel to try and establish a Jewish nation in the country. Additionally, Palestinians, who are of Arab descent, bring African and Middle Eastern cuisine to the country.

    Typical Foods

    • Israel is famous for its fresh fruit, particularly its citrus fruit such as oranges. Middle Eastern foods, including flat breads, lentils, raw vegetables and dairy products are also popular including yogurt and goat's cheese.

    Traditional Dishes

    • Falafels are one of the most commonly served dishes by street vendors and are often said to be Israel's national dish. They are made from mashed chickpeas which are moulded into balls and fried before being served in a pitta pocket with tahini (a lemon flavored sesame sauce). Shakshooka is another popular dish that originates from the Sephardic Jews from North Africa. It is made out of egg and tomato. Other traditional dishes include blintzes (cheese pancakes), matzo balls (dumplings eaten with chicken soup) and latkes (potato pancakes).

    Religious Influence

    • Over 80 percent of Israelis are Jewish therefore kosher, or kashruth, foods and customs affect the food available throughout the country. For example, meat must come from animals that have divided hooves and chew their cud. Additionally, pork, shellfish and carrion flesh eating birds cannot be eaten.

    Festival Foods

    • During Passover, boiled eggs dipped in salt, unleavened bread, known as matzo, green vegetable such as celery are widely consumed. These are normally served with wine and grape juice. At Rosh Hashanah, Jewish New Year, and Yom Kippur, The Day of Atonement, a honey cake is served. In general, sweet products are popular which can be seen as, in the Bible, Israel was referred to as "the land of milk and honey."

    Nutritional Value

    • Vegetables and fruit are prominent in the diet and, in the preparation of kosher food, fat is often removed making for a healthy lifestyle. The diet also has high levels of omega-6 which is recommended by nutritional experts. However, Israel has a high incidence of cardiovascular diseases and hypertension, suggesting that there may be hidden problems with this diet.
