Lamb Madras is an Anglo- Indian dish that is popular in England and Australia. Madras curries are considered "hot" but not super-hot. These types of curries use red chili powder as the source of heat. For lamb Madras, chefs use a blend of spices called garam masala. This spice mix usually includes cardamom, cumin, coriander, cinnamon, cloves and black pepper. Lamb Madras is normally eaten with rice or Indian breads like paratha, naan or chappatis.

    General Cooking Process

  1. Sauté chopped onions, garlic and ginger in oil in a large pot. After these ingredients are lightly browned, add the spices or the sauce mix. Next, brown the meat. You then add tomatoes or tomato paste, along with hot water. Cook until the lamb is tender and the sauce thickens. Most recipes call for boneless lamb for faster cooking time, but you could also opt for bone-in lamb as well. To reduce fat in this dish, use less oil for sauteeing and trim all excess fat from the lamb.

  7. This version of lamb Madras has about 414 calories a serving. Still, with 33 grams of fat per serving, this dish is not a light dish.
