Definition
-
A spatula is a handled kitchen tool with a broader end. That end may be flat or curved, flexible or rigid, and slotted or intact. Depending upon the shape and material, the spatula may be sold as a spatula, a turner, a scraper or a spoonula. Every kitchen needs at least a few spatulas; however, the type may depend upon how you cook and your cookware.
Turners
-
A broad, flat, rigid spatula is used to turn food while cooking and also to lift food. These spatulas can be used to turn pancakes, flip burgers or remove cookies from a cookie sheet. They are most often metal or plastic. Choose plastic if you use nonstick cookware, but metal often works better if it is acceptable to use with your pans.

Offset Spatulas
-
Offset spatulas are thin metal spatulas. Looked at from the side, the spatula forms a Z shape. These spatulas are primarily used to ice and frost cakes, cupcakes and other baked goods. The smooth flat surface allows icing to spread evenly, while the offset handle keeps the decorator's fingers from smudging the surface. When using an offset spatula, choose a larger and longer one for large cakes and a smaller one for cupcakes or cookies for the best result.
Flexible Spatulas
-
Spatulas made of rubber or silicone are used for stirring and scraping. Rubber spatulas can be used to scrape down the sides of bowls and stir the ingredients together. Silicone can serve this function, but also can be used on the stove top to stir a pot, scrape a pan or blend ingredients. If a flexible spatula has curved sides and a concave surface, it may be called a spoonula.
Choices
-
Spatulas traditionally have flat handles; however, you will find that modern companies offer spatulas with handles in a variety of shapes. Choose a handle that fits comfortably in your hand and appears sturdy. Thin wooden handles may snap while working with heavy batters. If you will be using your spatula on the stove, look for a heat-resistant handle to avoid melting.
