The number one use of baby video monitors is to keep an eye on baby while the baby sleeps. Its extremely reassuring in the early days to look up and see the baby's chest moving and hands opening and closing--all telling signs that the baby is breathing, sleeping and well.
Second, having a the video monitor on the baby while the baby plays can allow a parent to make dinner without ever taking her eyes off the baby. When an infant is awake, you want to be there interacting with the baby, but sometimes you do need to rise to check on food.
