Swelling

Swelling is also a common sign of the onset of a carrot allergy. Very soon after coming into contact with or ingesting carrots, you might notice your mouth swelling. This could include your tongue, lips, palate or even your throat. However, the latter is where such an allergic reaction can become dangerous, as the swelling could shut off your airway.

The rarest and worst symptom of a carrot allergy is anaphylactic shock. This occurs only in severe cases, when a person who is extremely allergic to carrots is exposed to them. Anaphylaxis is a rapid and drastic drop in blood pressure, which can cause the sufferer to pass out, go into a coma or even die. Immediate medical attention is required in these cases.
