- For centuries, yogurt has been associated with longevity. While it has a history that dates back more than 5,000 years, there is no evidence available that definitely indicates the exact time and place of its discovery. Many cultures, however, claim it as their own invention.
- It is widely accepted that the nutritional benefits of Yogurt are superior to those of pure milk. Yogurt is even more popular for its medicinal benefits especially for gastrointestinal related conditions. Lactose-intolerant individuals, for example, can take yogurt in place of milk with no adverse effect. It is also used to help in the prevention of diarrhea associated with the use of antibiotics. The probiotic effect of lactic acids in yogurt is believed to promote healthy gums.
- There are numerous variations of the preparation of yogurt. Yogurt is naturally sour, but creative flavoring can alter the taste with sweet and delectable flavor. Fruits or fruit jams are the most common flavor enhancements for yogurts. For longer storage, fruit jam is used instead of fresh fruit. When fresh fruit is stirred into the yogurt, it is called Swiss-style. Greek-style or stained yogurt is a sort of yogurt cheese produced by filtering plain yogurt through a paper or cloth filter, allowing water and whey to drain away. In the United States, most yogurts are added with pectin or gelatin. Fermented fat is usually placed at the top for specialty yogurts.
- Many people, particularly in the West, enjoy yogurt like ice cream or as added enhancement to healthy shakes. It is also enjoyed as a healthy snack simply by adding fruits. In the Middle East, yogurt is a frequent partner to meat, meat sauces and vegetables. To this day, there are cultures in which yogurt is the only way in which milk is taken.
- Yogurt can be homemade. The simple way to prepare yogurt is to scald milk using microwave or hot plate, cool it just above body temperature then add a spoonful of ready-made or store-bought yogurt, plain or flavored. When the mixture is ready, keep it warm between 41 to 49 degrees Celsius for approximately 8 to 14 hours. The proliferation of bacteria that is in the ready-made yogurt causes the mixture to become new yogurt during the fermentation. Once done, refrigerate immediately. For more flavor or enhancement, add fresh fruits, nuts, honey, or just anything that makes yogurt more fun and delicious.
