History

The Cabot Creamery's roots began in 1919 when 94 farmers in Vermont joined together to purchase the village creamery. Here they began producing butter under the name of Rosedale. In 1930 the company expanded and began producing cheddar. In the 1980s, the Rosedale creamery dropped its name and became the Cabot Creamery. In 1989, the Cabot Creamery took first place for its cheddar at the U.S. Championship Cheese Contest in Green Bay, Wisconsin. The company is still 100 percent farmer family-owned today.

The Cabot Creamery is in Cabot, Vermont. Visitors to this location can take tours of the creamery, still in the original location. Repeat visitors will enjoy a different weekly featured product each time. Cabot has two other locations in Vermont, in Quechee and in Waterbury/Stowe. These locations offer a wide variety of Cabot products, as well as samples. Cabot products are also available in many grocery and convenience stores as well as online.

Cabot Creamery specializes first and foremost in its famous cheddar. It offers aged cheddar, sharp cheddars and reduced-fat cheddar. It also offers a variety of flavored cheddar, including chipotle, chili-lime, habanero, horseradish, sun-dried tomato basil and Tuscan. In addition to the famous cheddar, Cabot Creamery also makes several other cheeses, including Monterey Jack, Muenster, pepper jack, mozzarella, Swiss, Colby jack and American.

Cheese-making is always a time-consuming process, but Cabot Creamery takes the aging process very seriously. Cabot Creamery offers several aged cheddars. The oldest is the Old School Cheddar, which is aged for five years. The Vintage Cheddar is aged two years, and its private stock is aged for 16 months. As well, several varieties of sharp cheddar undergo an aging process. The time and care put into these award-winning cheeses is well-recognized.

In addition to providing an extensive variety of award-winning cheddar and other cheeses, Cabot Creamery also features several other dairy products. Cabot has a line featuring a variety of yogurts. The company also produces sour cream, cottage cheese and whipped cream. And lest customers think Cabot has forgotten its humble beginnings, the company still produces the delicious Cabot butter that gave the creamery its start.
